My Free Cuba?

I've been traveling around United States for about 10 years now and there's a lot of people that asked me: -Where are you from? and when I say: -From Cuba....! they stare at me, and asked: -Where is that....!? Also, when an islander live for many years in a big continent, we forget details about the island. So I'll try to give you some info about my Cuba for free, and believe me, I love that word "FREE"...

06. My Wife's Cuban Beef


CASSEROLE STEAK (BISTEC EN CAZUELA)
You'll need:
4 sirloin steaks, 2 cloves of garlic, 1 lemon ,1/2 onion, 1/2 pepper, 3 tablespoons oil, 1/2 teaspoon salt, ¼ teaspoon ground pepper, ¼ cup tomato sauce, ½ cup dry wine.
How to:
Pound the meat and marinate it in lemon juice and crushed garlic. Stir fry the marinated meat with onion and pepper until the onion is translucent. Add the remains of the marinate and the rest of the ingredients. Cover the pot and simmer until the meat is tender, about 25-30 minutes.

GRIELLED SHREDDED BEEF (VACA FRITA)

You'll need:
1 1/2 lbs flank steak, 1 bell pepper, 2 white onions, 1 bay leaf, 2 garlic cloves, smashed, salt, 1/4 cup lemon juice, 3 tbs olive oil, ground black pepper.

How to:
Boil to tender the flank steak and let cool. Shred the meat and transfer to a bowl. Mash the garlic to a paste with 1/2 tsp of salt. Stir the paste into the meat, along with the lemon juice, olive oil, and sliced onion. Let stand at room temperature for 30 minutes to 1 1/2 hours. Heat a large griddle until very hot. Working in batches, spread the shredded beef on the griddle in a thin layer and season with salt and pepper to taste. Cook over high heat, turning once or twice, until sizzling and crispy in spots, about 6 minutes per batch. Transfer to a platter and serve.


SHREDDED BEEF (ROPA VIEJA)

You'll need:
1 1/2 lbs flank steak, 1/3 cup oil, 1 onion, 2 cloves of garlic, 1 bell pepper, 1 cup tomato sauce, 1 teaspoon salt, 1 bay leaf, ½ cup dry wine.

How to:
Boil to tender and shred the meat. Slice the onion into thin rings and the pepper into strips. Crush the garlic, saute the onion and bell pepper in hot oil, add the garlic, the meat and the remaining ingredients. Cook covered over low heat for 20 minutes, stirring occasionally to prevent from sticking.

GROUND BEEf (PICADILLO)

You'll need:
1lb ground beef, ¼ cup oil, 1 onion, 1 bell pepper, 2 clove of garlic, ¼ cup green olives, 1 teaspoon salt, 1 dash of ground black pepper, ½ cup tomato sauce, ¼ cup dry wine.

How to:
Saute the chopped onion, the crushed garlic and the pepper in the oil; add the meat and cook for a few minutes, stirring constantly to prevent the meat from sticking to the bottom of the pot. Add the remaining ingredients and cook over medium heat for about 20 minutes.

CUBAN BEEF STEW (CARNE CON PAPAS)

You'll need:
¼ cup oil, 1 white onion, cut into small cubes, 1 tablespoon minced garlic, 1 chopped green pepper, 1 cup chopped canned tomatoes, 1 tablespoon dry oregano, 1 tablespoon dry cilantro, 3 lbs beef top round, cut into 1-inch cubes, 1 cup dry sherry, 4 large peeled potatoes, cut into 1-inch cubes, salt and white pepper.

How to:
In a skillet, heat oil and sauté onions, add garlic, peppers, tomatoes, spices meat and sauté for 5 more minutes. Add sherry and simmer, uncovered, 5 min. Add potatoes and water to cover. Let simmer until potatoes are tender, about 20 minutes.
